You just need to change it to your logo, you can do that in Invoice, Invoice Settings.

We send 1,000's of invoices a day so have tests running on that service all the time. We're currently not seeing any errors on our system.
Try the following.
Check with your hoster that there isn't any issues.
Check your settings on Bullet to insure they're right, your hoster should approve them.
If you're still having issues then remove your own hosting settings till the issue is resolved with your hoster. You can still send invoices via Bullet's address.
