My business has recently had to register for VAT and as such, I now need to include this on invoices etc. I can seem to change this in Bullet.

Sure, we have to migrate your account over to VAT.
We can register you for VAT on Bullet. Please provide the following.
1) You VAT number.
2) The date the government registered you for VAT.
3) Your company name.
4) The email you use to manage that company in Bullet.

    VAT has been activated on your account now Stephen - you'll see the VAT dropdowns when creating invoices and bills, and also see VAT3 tax returns too. You can also badger the election canvassers to lower the rate too!
