How can I setup a repeating bill with a variable amount i.e. not a fixed amount each month?

The only way to manage the variable billing would be to plug the billing engine API into Bullets API but I suspect the operator won’t let you do that.
The easiest thing to do this don’t manually create the bill. Once a month do the bank rec, Bullet will see you don’t have a Bill for that amount and prepopulate you for you.
Other than that you’ll just need to create a bill for it. We’re working with a new bank Realex Fire to automate the whole process. So you wont have to create bills at all.

Give me an example of what you're talking about, is it a phone bill or is it fees from an online product?

Yep, recurring mobile phone bill that has a basic plan. But some calls aren't covered so get charged over an above the basic plan. Therefore, its a variable amount .
